We hand craft beer using our two onsite brewing systems, always offering a range of styles. From juicy New England IPAs, to European influenced lagers, to West Coast IPAs, to dark beers and stouts, Sly Bandit has choices for different tastes. And we try to offer something new every few weeks with rotating seasonal and nano-batch experimental brews. Feeling peckish? The Bandit also hand crafts food in our fully equipped kitchen. Whether something to munch on with your beer or a full lunch or dinner, our menu offers a range of choices, and our chef keeps it interesting with rotating selections and specials. Of course, we offer wine and non-alcoholic beverages for times when beer just doesn't do it. (Are there times like that?) Even our taproom/dining room gives you a choice. Whether you want to sit at the bar, congregate around a high top, or socialize at a traditional height table… we’ve got you covered.

Experience the vibe and variety at Sly Bandit Brewing

Wendy is into the details…schedules, orders, accounting, etc. As a longtime math teacher at New Canaan High School and current adjunct professor at CT State, it comes naturally to her. Most importantly, she is the third leg of the Sly Bandit ownership, bringing balance, perspective, and, in the “rare” occasion where opinions diverge, the tie breaking vote.

Dave loves strategizing, solving puzzles, and tackling new problems, which comes in handy every day at Sly Bandit Brewing. He gained a wealth of experience working in multinational corporations, providing management consulting services, and managing investments; but he often calls upon skills gained in his youth when he worked with his hands and in restaurants. And, by the way, he is also the assistant brewer.

The Fixer

Dave

Mike is the head brewer. He is responsible for brewery operations and all the beers we make, serve, and sell. A former marketing research executive, he gave up a 17-year career to focus on the passion he cultivated over almost two decades. He started home brewing in college, got Dave hooked after graduating and returning to Connecticut, and supplemented his self-learned skills with formal training in commercial craft brewing.
